This past week has been a tough one for us. Due to coronavirus pandemic, many people are asked to work from home to practice social distancing. As a result, lots of businesses such restaurants are losing money and are trying to figure out ways to liquidate their inventory. Our parents were informed of a local seafood restaurant selling live lobsters for $8/lbs (Cdn) and could not resist the deal. We had initially asked for them to pick us up a 3 lbs lobster. When we went to pick up the live lobster from their porch (social distancing), we realized we got a lobster much bigger than we expected – 5lbs to be exact. We took a picture of it beside a banana for scale.

As you can imagine, this leaves us with a lot of lobster meat. Rest assure, we’re making sure none of it goes to waste. One of the things we were really craving/wanted to try was make Easy Lobster Rolls.

The problem? We did not have any hot dog buns readily available as we were not prepared for this impromptu purchase. In order to limit the need to go outside, we decided to be resourceful and make our own hot dog buns!

Making the lobster salad that goes inside the hot dog buns to make the lobster roll is fairly simple and straight forward. All you need to do is first prepare the Lobster Salad.

How we cooked the lobster:

We didn’t do anything fancy to cook the lobster – all we did was boil it in a large pot of boiling water seasoned with salt. We followed the instructions from Maine Lobster for the cooking time based on how heavy the lobster was. For us, it was roughly 35 minutes.

Suggestions on spices/herbs to add to your lobster salad:

You can have some flexibility in terms of what herbs you want to use but we went with what we had available around the house. Here are some suggestions on what spices/herbs you can add to your lobster salad:

  • Parsley
  • Tarragon
  • Smoked Paprika
  • Basil
  • Thyme
  • Sage

Possibilities are endless and it all comes down to personal preference. See below for the recipe we ended up using
